Avocados, Running & TED-ED

In addition to making banana bread and chocolate mousse out of over ripe avocado (recipe to follow) I have been running (a lot) which I highly recommend for vitamin D and a head clearing experience. I also appear to be principle, teacher, lunch lady and caretaker of the Hughes-Leaver Academy......its going well and although it may not be evident from what I have written here my knowledge & understanding of grammar has improved and this morning we were analysing poetry!

Avocado, chocolate & Coconut mousse (I cant take credit for the recipe, it's a Waitrose one I adapted)

Ingredients 

Toppings
Not essential but if you're feeling fancy......I have been using mini eggs

Mousse
2 Ripe Avocados
4 tbsp cacao powder (if you use cocoa powder it will be sweeter and you might need more)
5 tbsp maple syrup
0.5 tsp vanilla extract
4 tbsp  milk (dairy free if you want, I use almond or coconut milk or natural yogurt)

Method
Put everything in a blender - I use a nutribullet with a pinch of sea salt until smooth
Spoon into ramekins ( or similar, obviously I don't have ramekins)
Chill for up to 24 hours (it wont last this long) add your mini eggs or whatever else you'd like to sprinkle on top and enjoy......
