Chargrilled Broccoli with Chilli and Garlic - Walter (Cucina)



Ingredients (serves 2-4)

  • 2 heads of broccoli
  • 115 ml olive oil
  • 4 garlic cloves, thinly sliced
  • Sea salt and black pepper to season
  • Thin slices of lemon with skin
  • 2 red chillies


Method

  1. Cut the head of broccoli and try to use the whole head to avoid wastage.  Put some water in a large sauce pan and bring to the boil, then add the broccoli and blanch for approximately two minutes, do not over cook, keep all the vitamins in.  Quickly transfer the broccoli into a bowl with ice cold water for around five minutes, then drain and dry it.  You can use raw broccoli, just wash thoroughly and cut very thin.
  2. In a mixing bowl, toss the broccoli with 50ml of olive oil and a generous quantity of salt and pepper.
  3. Place a grill pan over a high heat, when it is hot grill the broccoli in several bunches until they are charred.  You can use a very hot frying pan if you do not have a grill pan.
  4. While charring the broccoli, place the rest of the oil, the chilli and the garlic in a saucepan on a medium heat until the garlic turns golden-brown.
  5. Serve warm or at room temperature, you can garnish with almonds, lemon or any seed of your preference before serving.
  6. Enjoy
