Weetabix.
Bare with me here, the Art Department can vouch that it is as tasty as any other fruit cake!
The recipe
2 Weetabix
200ml skimmed milk
100g sultanas (I substitute with dried fruit mix)
100g self-raising flour (You could try gluten free, or wholemeal flour if you wish)
1 tsp mixed spice (If you do not have this try a mix of nutmeg, cinnamon, ginger or similar)
2 level tbsp sweetener (You could use sugar)
2 large eggs, beaten
The method
1. Preheat your oven to 180°C/fan 160°C/gas 4 and line a 450g loaf tin with non-stick baking paper (I use a 2ltr loaf tin).
2. Put the Weetabix into a large bowl and pour in the milk. Leave for 2-3 minutes then mash with a fork.
3. Beat in all the remaining ingredients, spoon the mixture into the prepared loaf tin and bake for 1 hour (To avoid burning I place baking paper over the top about 40 minutes in )
4. Cool the cake on a wire rack, turn out and slice to serve.
