I am currently on week 5 of Couch to 5K (running like an old
lady!). Whilst out and about, running/hobbling around the woods, I have
been collecting goodies on my travels.
So this week I picked Wild Garlic
Chives and made pesto, super easy and tasty and a good alternative when you
cannot buy basil. The other bit of deliciousness is Elderflower Cordial,
again super easy and so refreshing. Yes it does have lots of sugar in it
but you only need a splash and then dilute with ice cold water, soda, sparkling
water or add to Prosecco, gin - whatever you fancy - a real taste of summer.
Something the children can get involved in making.

ReplyDelete25 large open elderflower heads (picked in the sunshine)
2 1/2 kg sugar (granulated or caster)
x2 large lemons
85g Citric Acid (from Chemist)
Put sugar and 1.5 litres of water in to a large saucepan
Gently heat, without boiling until sugar has dissolved.
Pare the zest from lemons using potato peeler, then slice in rounds
Once sugar has dissolved bring the pan of syrup to the boil then turn of the heat.
Give flowers a shake to dislodge any bugs and give flowers a quick swish in some cold water to loosen any dirt.
Put syrup, lemons, elderflower and citric acid in large bowl/pan/bucket! Cover and infuse for 24 hours.
Line a colander with a muslin/clean cloth and sit over a large bowl or jug. Ladle inthe syrupand let it drip through.
Pour into sterilised bottles and chill in fridge. Keeps for 6 weeks or I freeze in plastic bottles.
