Stuffed Aubergine with Minced Beef by Walter P (Cucina)



Ingredients (serves 6)

  • 3 large aubergines, halved (do not remove stalks)
  • 2 large onions, diced
  • 500g mince beef
  • 4 large tomatoes, diced
  • 1 green pepper, roughly chopped
  • ½ bunch of parsley
  • salt, pepper and olive oil 




Method

  • Preheat the oven at 180○c
  • Rub the aubergine with oil, salt and pepper
  • Place in a tray with baking paper and cook for around 10 min or until soft
  • Leave to cool and put tray to one side to use later
  • In a hot pan add a generous amount of olive oil and fry the onions until golden brown 
  • Add the mince and keep stirring for about 8 minutes, once browned add three of the four tomatoes
  • Season with salt and pepper (you can add spices of your preference to give it a touch of your personality)
  • Take the pan off the heat and add the chopped parsley (use all of the parsley, including the stalk to avoid wastage)
  • Use a spoon to create a cavity in the aubergines, stuff with mince, do not be afraid to pile it high
  • Top each with the remainder of the tomatoes and green peppers, put it back to the oven (use the same tray which you used to bake the aubergines)
  • Bake for around 14 minutes at 170○c
  • Serve hot and with rice, cous cous or roasted potatoes
  • Enjoy!
