Stuffed Aubergine with Minced Beef by Walter P (Cucina)
Ingredients (serves 6)
- 3 large aubergines, halved (do not remove stalks)
- 2 large onions, diced
- 500g mince beef
- 4 large tomatoes, diced
- 1 green pepper, roughly chopped
- ½ bunch of parsley
- salt, pepper and olive oil
Method
- Preheat the oven at 180○c
- Rub the aubergine with oil, salt and pepper
- Place in a tray with baking paper and cook for around 10 min or until soft
- Leave to cool and put tray to one side to use later
- In a hot pan add a generous amount of olive oil and fry the onions until golden brown
- Add the mince and keep stirring for about 8 minutes, once browned add three of the four tomatoes
- Season with salt and pepper (you can add spices of your preference to give it a touch of your personality)
- Take the pan off the heat and add the chopped parsley (use all of the parsley, including the stalk to avoid wastage)
- Use a spoon to create a cavity in the aubergines, stuff with mince, do not be afraid to pile it high
- Top each with the remainder of the tomatoes and green peppers, put it back to the oven (use the same tray which you used to bake the aubergines)
- Bake for around 14 minutes at 170○c
- Serve hot and with rice, cous cous or roasted potatoes
- Enjoy!
