Sushi by Walter P (Cucina)

Ingredients (makes 6)
  • 300g sushi rice
  • 450ml water
  • 100ml rice wine vinegar
  • 2 tablespoons caster sugar
  • 1 pack of Nori seaweed sheets
  • Wasabi, pickled ginger, soy sauce


Filling (your preference)
  • Sliced cucumber
  • Sliced or chunks of smoked salmon 
  • Sliced peppers
  • Tuna
  • Diced avocado
  • Sliced spring onions
  • Pulled cooked chicken
  • Sheered duck


Method

  • Before cooking wash rice in cold water and drain it.
  • Place into a thick pan with water.
  • Cover the pan and bring to boil, move the pan and turn down to a very low heat to simmer.
  • Cook for around 10 minutes until the water has been absorbed or the rice is cooked.
  • Leave the pan covered for 10 minutes to rest.
  • Add sugar and vinegar together and mix in well.
  • Put the nori sheet shiny side down on a sushi mat or cling film.
  • Dip your hand in the vinegar/sugar water and pat down a 1cm thick layer, leaving the furthest edge free of rice about 2 inches.
  • Place the filling of your preference (horizontal line in the middle of the rice).
  • Lift the edge with the mat or cling film and roll applying a little pressure until rolled tightly.
  • Wrap in cling film and place in fridge until required.
  • Slice sushi about 3/4 inches thick and serve with the wasabi, pickled ginger, soy sauce or salad of your preference.
