Butternut and Sweet Potato Burgers by Walter P
Ingredients
350g diced butternut and sweet potatoes
250g any grains i.e. rice, quinoa,
barley, bulgar wheat
2 tsp smoked paprika
25 grams flat parsley
Zest of one lemon
1 tsp plain flour
2 tsp sunflower oil
4 large burger buns
1 garlic clove, crushed
4 tbsp mayo
100 grams baby gem lettuce
Method
Simmer the squash and sweet potato in salted water for 8 - 10 minutes until tender, then drain and mash.
Mix with the grain of your preference (as above) and add the paprika, chopped parsley, lemon zest, flour and seasoning.
Shape into 4 burgers, dusting your hands
with a bit of flour to help.
Heat the oil in a non stick frying pan and
cook the burgers for around 5 minutes on each side.
Cut the bun and toast it.
Mix the garlic with the mayo.
Toss the parsley leaves with the baby gem lettuce.
Build up your burger, spread some mayo on the bottom of the bun, add the baby gem, the burger, more mayo, some fresh
slice tomatoes, a few drops of lemon juice and enjoy it!
