Lomo Saltado by Walter P
Ingredients (serves 4)
- 400 grams diced frying beef of your choice (I recommend rib eye steak)
- 300 grams red onion roughly sliced
- 500 grams beef tomatoes roughly sliced
- 40 grams garlic puree
- 5 tablespoon dark soy sauce
- 1 tablespoon ground cumin
- 1 tablespoon smoke paprika
- ½ bunch of coriander
- 1 tablespoon ginger puree
- 14ml vegetable oil
- Salt and pepper
Method
- In a hot wok add the diced beef, frying for about 2 minutes to give some colour and concentrate all the juices inside.
- Add the onion, garlic and ginger puree, keep stirring and cooking for another 4 minutes.
- Keep cooking, add the soy sauce, cumin, pepper, paprika and tomatoes, cook for another 2 minutes.
- Take the Wok off the heat and add the chopped coriander.
- Traditionally this dish is served with chips and rice, but to cut the calories and to be healthier, I suggest serving with one or the other.
- If you like you beef rare reduce the cooking time by one minute.
