Lomo Saltado by Walter P

Ingredients (serves 4)

  • 400 grams diced frying beef of your choice (I recommend rib eye steak)
  • 300 grams red onion roughly sliced
  • 500 grams beef tomatoes roughly sliced
  • 40 grams garlic puree
  • 5 tablespoon dark soy sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon smoke paprika
  • ½ bunch of coriander
  • 1 tablespoon ginger puree
  • 14ml vegetable oil
  • Salt and pepper


Method

  • In a hot wok add the diced beef, frying for about 2 minutes to give some colour and concentrate all the juices inside.
  • Add the onion, garlic and ginger puree, keep stirring and cooking for another 4 minutes.
  • Keep cooking, add the soy sauce, cumin, pepper, paprika and tomatoes, cook for another 2 minutes.
  • Take the Wok off the heat and add the chopped coriander.
  • Traditionally this dish is served with chips and rice, but to cut the calories and to be healthier, I suggest serving with one or the other.
  • If you like you beef rare reduce the cooking time by one minute.
